Mustard
I have been looking more at photographers through history and was recently taken by the work of Edward Weston. He was working in a time with only monochrome photography, and with big, boxy cameras, but he explored the textures and patterns of vegetables in some of his work. We normally think of macro photography as capturing a great range of colors along with fine detail, but sometimes it is nice to let the texture and value stand on their own.
This particular image is actually interesting in color. This is purple mustard, and the green and purple intermixed look great. But I actually think it has more to offer in black and white.
